Quick and Easy Vegetable Biryani

sIngredients:

Rice (any kind of) – 2 cups
Water    –  4 cups
Mixed vegetables  – 1 ½ cups
Cumin seed    –  ½ teaspoon
Turmeric powder   – 1 teaspoon
Garam masala powder  –  ½ teaspoon
Cumin powder(optional) –  ½ teaspoon
Black pepper powder(optional) – ½ teaspoon
Oil     – 2 tabs. spoon
Salt    – to taste
Chopped green chili(optional) –  3-4
Coriander leaves (optional)  –  For garnish

Method:

  • Wash rice properly and keep in a either rice cooker or any cooking pan with  four cups of water.
  • Let it cook for a while.
  • If you are cooking in a different pan other than rice cooker, keep checking until rice is soft.
  • Make sure that rice does not get mushy and sticky kind of. If needed pour little more water into it.
  • In another pan heat two table Spoons of oil and add cumin seeds and green chili, then add washed mix vegetables.
  • Fry for two minutes and cover with lid.
  • Stir it every 3-4 minutes to make sure it cooks evenly.
  • Keep the heat on medium.
  • Once the vegetables ae fully cooked add cooked rice and mix it well.
  • Turn off the stove.
  • Garnish with green chilies and coriander leaves.
  • Your vegetable biryani is ready to eat.
  • Serve hot with any curry or  pickles.
